Iron and Its Role in Bodily Function

Function in the Human Body

Iron plays a large role in the human body by carrying out cellular functions. Iron binds to hemoglobin in the blood. This helps to create and bind blood cells together. The blood then carries oxygen and other nutrients into cells, and carries waste out of cells to be filtered by the kidneys. Iron is also found in myoglobin, a protein in muscles, to restore oxygen. Severe blood loss is the leading cause of iron deficiency. Since the body cannot produce its own iron, it must come from what gets ingested.

Role in Health and Diet

Iron is found in a multitude of foods. Since iron is found in muscles in the human body, and we share over 70% of our DNA with other animals; it makes sense that iron would be found in their muscles. We eat other animals’ muscles in the form of meat. Meat that is high in iron can be found in beef, veal, pork, lamb, chicken, and turkey. Some fish also has iron including shellfish. Vegetables also contain high levels of iron. Iron-rich vegetables include; greens, tofu, broccoli, brussel sprouts, beans, corn, and cabbage. People who lack iron should also eat foods rich in Vitamin C, as it helps the body to process iron.
